53 MODULAR COOKING

Modular cooking When we look for a professional kitchen, we’re faced with a huge choice. It is very important to choose the right power for your needs. An incorrect appliance will not reach the required cooking temperature, which will result in less cooking results and affect the reproducibility of our dishes. In addition, a device with nominally weaker power will run for a longer time, which may result in a actually higher energy consumption. Modularity and Selection Flexibility The manufacturer’s range is very broad. As electricity price (€)s increase, use a gas kitchen with modular burners. They give you the flexibility to cook while saving energy and reducing costs. Gas kitchens can be equipped with 2, 4 or even 6 burners. Models are avail- able on the basis of an open, static or convection oven as well as a gas oven. If your kitchen is equipped with a combi steamer, you do not need to purchase a module with an oven. It’s worth thinking about an interesting solution to put an adjustable kitchen on a cooling base. This offers good ergonomics and space-saving benefits. However, if we want to use electricity, we are very interested in the range of induction kitchens. They guarantee high performance with minimal electricity consumption. The cost of buying is higher than traditional electric kitchens, but it pays for itself even after several months of use. We can place modular kitchens in the form of a line against the wall or in the form of a central island in the centre of the kitchen. This gives us the opportunity to install additional equipment such as a shelf above an island, electric outlets or a water column in the appli- ance. This allows us to make a soup cream with a hand mixer in the kitchen, or fill a pot with battery water, without having to carry the pot to 54
